Wash and cook the rice
Rinse the rice in a fine sieve under cold water, rubbing it with your hand, until the water runs clear. Cook it in a rice cooker, or in a covered pot: bring the rice and water to a boil over high heat, then lower the heat and simmer 12-15 minutes until the water is absorbed. Turn off the heat and let it rest covered for 10 minutes without opening the lid.
- 300g sushi rice
- 300ml water
✅ C'est prêt quand : rice is tender, water fully absorbed, small steam holes on top

Season the rice
In a small pot over low heat, warm the rice vinegar, sugar and salt for about 1 minute, stirring, until dissolved. Spread the hot cooked rice in a wide bowl, pour the vinegar mix over it, and mix gently with a flat spoon, cutting through the rice instead of stirring hard, fanning it until it cools to room temperature.
- 60ml rice vinegar
- 2 tbsp sugar
- 1 tsp salt
✅ C'est prêt quand : rice is glossy, seasoned and cooled to room temperature

The Story Behind the Dish
Despite its Japanese name, the California Roll was invented in North America. The most widely accepted origin story credits Ichiro Mashita, a sushi chef at Tokyo Kaikan in Little Tokyo, Los Angeles, around 1963. Faced with the unavailability of fatty tuna (toro), he substituted avocado, whose creamy texture mimicked the richness of tuna belly.
To make sushi more approachable for American diners who were uncomfortable with visible seaweed, the roll was made 'inside-out' (uramaki) — with rice on the outside and nori hidden within. This innovation was revolutionary and broke traditional sushi conventions.
The California Roll became the gateway sushi for millions of Westerners, single-handedly launching the global sushi boom of the 1980s and transforming sushi from an exotic Japanese delicacy into an everyday food worldwide.
⭐ Why It's Famous
The California Roll democratized sushi. By hiding the nori and using familiar ingredients like avocado and crab, it removed the intimidation factor and introduced an entire generation to Japanese cuisine. It proved that food traditions can evolve and cross cultural boundaries.
💡 Fun Fact
Traditional sushi chefs in Japan initially refused to recognize the California Roll as 'real sushi.' Today, it is served in sushi restaurants across Japan under the name 'Kashū Maki.'
