History & Culture

The Story Behind the Dish

📍 Lima📅 Late 19th century🥩 PE

Lomo saltado is the most famous dish of chifa, the Chinese-Peruvian cuisine born when thousands of Chinese workers arrived in Peru in the 19th century. They brought the wok, soy sauce and stir-frying, and combined them with Peruvian beef, ají and potatoes.

It quickly spread from Lima's Chinatown to every home and restaurant in the country, and it's now one of Peru's best-loved everyday dishes.

⭐ Why It's Famous

Fries and rice on the same plate, smoky wok flavour and a tangy, savoury sauce: it is fusion food at its most delicious.

💡 Fun Fact

Peru has more chifa restaurants than any other type of restaurant in Lima, often said to be well over a thousand.
