The Story Behind the Dish

📍 Arequipa📅 Traditional🥗 PE

Solterito is a fresh salad from the picanterías of Arequipa, usually served as a starter before heavier dishes like rocoto relleno or adobo.

It brings together Andean produce (broad beans, corn and rocoto) with fresh cheese and olives from Peru's southern coast.

⭐ Why It's Famous

Bright, crunchy and creamy, it's a vegetarian classic of one of Peru's great food cities.

💡 Fun Fact

The name means 'little bachelor'; one story says it's what single men could make without cooking skills.
