The Story Behind the Dish

📍 Lima📅 20th century🍲 PE

Aguadito, 'little watery one', is the soupy cousin of Peruvian arroz con pollo, with the same green coriander base but much more broth.

It's the soup Peruvians make when someone is ill, after a long night out, or on a cold, grey Lima winter day, and it's traditionally served at the end of parties in the early hours to revive the guests.

⭐ Why It's Famous

Warming, filling and full of fresh coriander, it's Peru's answer to chicken noodle soup.

💡 Fun Fact

At Peruvian weddings and birthday parties, a late-night pot of aguadito is called the 'levanta muertos', the soup that 'wakes the dead'.
