Mix meat and rice

Mix meat and rice

In a bowl, combine the beef, raw rice, egg, grated onion, garlic, mint, salt and pepper with your hands just until combined. Let the mixture rest 10 minutes so the rice starts drawing in moisture, keeping the meatballs tender.

  • 600 g ground beef
  • 70 g raw rice
  • 1 egg
  • 1/4 grated onion
  • 2 cloves minced garlic
  • 2 tbsp mint or parsley
  • 1 tsp salt
  • 1/2 tsp black pepper

Shape the meatballs

Roll the mixture into about 18 balls, each a little smaller than a golf ball, pressing gently so they hold together without being packed too tight. Set them on a plate while you make the sauce.

History & Culture

The Story Behind the Dish

📍 Central Mexico, especially Mexico City and Puebla📅 Rooted in colonial-era Spanish cooking, popularized as a modern Mexican home dish🍲 MX

The word albóndiga comes from the Arabic al-bunduq, meaning 'hazelnut,' a nod to their round shape, and the dish travelled to Mexico through Spain, where Moorish cooking had long shaped the kitchen. Mexican cooks folded in local touches, raw rice simmered right inside the meatball, fresh mint instead of the old-world herbs, and eventually the smoky chipotle sauce that gives this version its character.

Today albóndigas en chipotle are a staple of comida casera, the everyday home-cooked meal served with rice and warm tortillas, found on family tables and in neighbourhood fondas across the country.

⭐ Why It's Famous

The combination of tender, rice-studded meatballs with a smoky, slightly sweet chipotle sauce is pure Mexican comfort food, rich but balanced, and endlessly satisfying with tortillas.

💡 Fun Fact

Simmering the raw rice directly inside the meatball, rather than pre-cooking it, is the traditional technique: the rice finishes cooking in the sauce and helps bind the meat without needing breadcrumbs.
