Steps

Mix and rest the batter

In a bowl, whisk the rice flour, tapioca starch, salt and water together until completely smooth, with no lumps at the bottom. Let the batter rest, uncovered, for 30 minutes; this lets the flour fully hydrate so the pancakes turn out crisp outside and soft inside instead of gummy.

  • 200 g rice flour
  • 30 g tapioca starch
  • 500 ml water
  • 1/2 tsp salt

✅ Done when: the batter is thin, smooth and pourable, like a light crepe batter

Make the dipping sauce

Warm the water with the sugar just until the sugar dissolves, then stir in the fish sauce, lime juice, garlic and chili. Taste: it should hit sweet, salty, sour and spicy all at once; adjust with a little more lime or sugar if needed.

  • 60 ml fish sauce
  • 60 g sugar
  • 60 ml water
  • 2 tbsp lime juice
  • 1 clove garlic
  • 1 red chili

✅ Done when: the sugar has fully dissolved and the sauce tastes balanced and lively

History & Culture

The Story Behind the Dish

📍 Phan Rang and the south-central coast of Vietnam📅 A long-standing everyday street food, not tied to a single historical moment🥞 VN

Bánh căn comes from the fishing towns along Vietnam's south-central coast, especially around Phan Rang, Nha Trang and Da Lat, where rice is plentiful and small clay kilns were already used for everyday cooking. Vendors shaped little round molds from clay or cast iron so each pancake could cook separately, picking up a crisp shell from direct contact with the hot mold instead of a flat pan.

Over time the dish spread along the coast and up into the highlands, with each town adding its own touches, from quail egg and shrimp toppings near the sea to simpler versions inland. It stayed a humble, affordable snack sold from small stalls and night markets, often eaten standing or perched on tiny stools around the vendor's grill.

⭐ Why It's Famous

Bánh căn is loved for the contrast between its crisp, slightly charred edges and soft, custardy center, plus the fun of eating it fresh off the grill, wrapped in lettuce and herbs and dunked in a lively sweet-sour fish sauce.

💡 Fun Fact

Vendors cook bánh căn in trays of small round molds that look almost like mini muffin tins, flipping and popping out each pancake by hand with a thin spoon or skewer.
