The Story Behind the Dish
Enfrijoladas belong to the same family as enchiladas (in chilli sauce), entomatadas (in tomato sauce) and enmoladas (in mole): tortillas dipped in a sauce and folded or rolled.
They're everyday food in Mexican homes, made with leftover beans and tortillas, especially for breakfast or a light supper.
⭐ Why It's Famous
Creamy, comforting and ready in 30 minutes, they show how Mexican cooks turn the simplest staples into something delicious.
💡 Fun Fact
In Oaxaca, enfrijoladas are often flavoured with toasted avocado leaves, which give the beans a subtle anise flavour.
