The Story Behind the Dish

📍 Lima📅 Colonial era🍗 PE

Estofado comes from the Spanish stews of colonial times, adapted in Peru with ají panca and local potatoes. It's one of the most common Sunday lunches in Peruvian homes.

The touch of raisins is a hallmark of criollo cooking, which loves to mix sweet and savoury.

⭐ Why It's Famous

Comforting, saucy and full of vegetables, it's what many Peruvians think of as 'mum's cooking'.

💡 Fun Fact

In some Peruvian homes, estofado is made with red wine and served with a fried ripe plantain on the side.
