History & Culture

The Story Behind the Dish

📍 All over Cuba📅 Colonial era🍲 CU

The name comes from the French fricassée, a stew of meat cut into pieces, which reached Cuba through Spain. Cuban cooks gave it a tropical twist with sour orange, cumin and the classic Cuban trio of olives, raisins and capers.

It's a dish of family Sundays and grandmothers' kitchens, made in one big pot and served with rice to soak up the sauce.

⭐ Why It's Famous

Tender chicken in a tangy, slightly sweet tomato sauce with potatoes is pure Cuban home cooking.

💡 Fun Fact

The same fricasé base is used in Cuba for pork, rabbit and even goat (fricasé de chivo).
