Steps

Scrub the crabs clean
Rinse the live crabs under cold running water, scrubbing the shells and legs with a stiff brush to remove mud and sand. If your fishmonger has already purged and cleaned them, just rinse well; if not, keep them in a bucket of fresh cold water for a few hours beforehand so they clear out their gut and taste cleaner.
- 8 live land crabs
✅ Done when: the shells look clean and the rinsing water runs clear, not muddy

Build a well-seasoned broth
In your largest pot, combine the water, salt, onion, garlic, bell pepper, , culantro, bay leaves, peppercorns and vinegar. Bring to a rolling boil at 100°C (212°F) and let it boil uncovered for 10 minutes so the broth turns deeply fragrant before the crabs go in.
- 4 litres water
- 60 g coarse salt
- 1 onion
- 1 head garlic
- 1 green bell pepper
- 4
- 10 sprigs culantro
- 4 bay leaves

The Story Behind the Dish
Land crabs have been eaten on the island since before European arrival, when the Taíno gathered them from mangroves and coastal burrows. Over time coastal and rural communities developed the tradition of catching jueyes at night, often with a flashlight and a sack, then holding them for a few days so they purge whatever they last ate before cooking.
Boiling them simply, with a bold mix of garlic, onion, peppers and culantro, became the everyday home method, while bigger batches are cooked outdoors in enormous pots for family gatherings, patron saint festivals and Easter week, when crab largely replaces meat on many Puerto Rican tables.
⭐ Why It's Famous
Jueyes hervidos are loved for the ritual as much as the taste: cracking the shells by hand, dipping the sweet meat in garlicky lime sauce, and sharing the mess at a table lined with newspaper.
💡 Fun Fact
Land crabs are picky eaters that can carry whatever they last fed on, so Puerto Rican families traditionally confine them for several days, sometimes feeding them corn, to purge their systems before they ever reach the pot.
