The Story Behind the Dish

📍 Udupi, Karnataka📅 Dosa: ancient; masala dosa: 20th century🥞 IN

Fermented rice-and-lentil pancakes have been eaten in South India for many centuries. The masala dosa — filled with spiced potato — is most often credited to the temple town of Udupi in Karnataka, whose vegetarian cooks spread the dish across India through their 'Udupi' restaurants.

Today it's one of India's most recognisable dishes and a favourite breakfast everywhere.

⭐ Why It's Famous

Crisp, tangy, naturally gluten-free and vegan, masala dosa is South India's gift to the world's breakfast table.

💡 Fun Fact

Fermentation is what gives dosa its tang and crispness — and the bacteria at work also make the batter more digestible.
