Steps

Salt the eggplant

Salt the eggplant

Put the eggplant cubes in a colander set over a bowl, toss with the coarse salt, and let them sit for 30–35 minutes. This draws out the bitter juices and extra water that would otherwise make the eggplant soggy and oily when fried, instead of crisp. Pat the cubes very dry with paper towels before frying.

  • 700 g eggplant cubes
  • 1 tbsp coarse salt

✅ Done when: the eggplant feels drier, drops of water sit in the bowl below, and the cubes are completely dry to the touch after patting

Fry until golden

Fry until golden

Heat the frying oil in a deep pan to about 170–180°C (340–355°F): a cube of eggplant dropped in should sizzle and bubble right away without browning too fast. Fry the eggplant in small batches, without crowding the pan, for 4–5 minutes until deep golden and soft inside. Lift out onto a tray lined with paper towels and season lightly with salt.

  • 700 g salted eggplant (from step 1)
  • 750 ml frying oil

✅ Done when: the cubes are golden-brown all over, soft when pressed with a spoon, and the oil stays clear rather than turning dark and cloudy

History & Culture

The Story Behind the Dish

📍 Catania, Sicily📅 Early 20th century🍆 IT

Pasta alla Norma was born in Catania, on the eastern coast of Sicily, where eggplant and tomatoes grow abundantly and ricotta salata is a local specialty made from sheep's milk. The dish takes its name from Vincenzo Bellini's opera Norma, a point of great pride for the city, where Bellini was born.

According to local legend, a Catanese writer tasted the dish and declared it a true 'Norma', meaning a masterpiece worthy of the opera. The name stuck, and the pasta became one of Sicily's most loved dishes, served in trattorias across the island and far beyond.

⭐ Why It's Famous

It turns humble, inexpensive ingredients, eggplant, tomato and salty cheese, into something rich and deeply satisfying, a true showcase of Sicilian sun and simplicity.

💡 Fun Fact

Catania still has streets and cafés named after Bellini, and the city celebrates both its opera house and this pasta as symbols of local pride.
