Steps

Chill the coconuts
Put the whole coconuts in the fridge or a cooler with ice for at least 2 hours before serving. A cold coconut makes the whole drink refreshing without needing much extra ice.
- 2 young coconuts
✅ Done when: the coconuts feel cold to the touch

Open the coconut
Stand the coconut on a steady board. Use a heavy knife to shave away the fibrous husk at the pointed top until you reach the hard shell, then strike firmly with the back of the blade to cut a lid about 6 cm wide. Lift the lid off carefully so you don't spill the water inside.
- 2 coconuts (from step 1)
✅ Done when: you have a clean, wide opening and can see the water and soft white meat inside
Make room for the rum

The Story Behind the Dish
Saoco began as a simple refreshment where coconut palms and sugarcane grow side by side, in rural Cuba and along the coast, where field workers and fishermen would crack open a cold young coconut and pour in a splash of rum right where they stood. It needed no glass, no bar and no equipment, just a coconut and a blade.
⭐ Why It's Famous
It became a favourite at beach stands and roadside shacks across the island, prized for being made and served in its own natural cup, with the coconut meat mixed right in so every sip is also a bite.
💡 Fun Fact
Saoco is also the name of a well-known Cuban son song, a nod to how deeply this coconut-and-rum habit is woven into everyday island life.
