Make the dough
In a bowl, mix the flour, baking powder, salt and sugar. In another bowl whisk the olive oil, orange juice and tsikoudia together, then pour into the flour. Knead for about 5 minutes until you get a smooth, soft dough that no longer sticks to your hands, cover, and let it rest.
- 400 g flour
- 1 tsp baking powder
- 1 pinch salt
- 1 tbsp sugar
- 100 ml olive oil
- 100 ml orange juice
- 50 ml tsikoudia or ouzo
✅ C'est prêt quand : the dough is smooth and elastic, and springs back slowly when you press a finger into it

Mix the filling
In a bowl, mash and mix the mizithra with the egg, sugar, cinnamon and salt until you have a smooth, thick paste. If it looks watery, drain the cheese a little longer in a sieve or stir in a tablespoon of flour.
- 400 g mizithra or ricotta
- 1 egg
- 2 tbsp sugar
- 1 tsp cinnamon
- 1 pinch salt
✅ C'est prêt quand : the filling is smooth, holds its shape on a spoon, and is not runny

The Story Behind the Dish
Kalitsounia are small hand-folded pies found all over Crete, with every village having its own favourite shape and filling. The sweet version, filled with fresh mizithra, sugar and cinnamon and fried until golden, is especially associated with Easter and village festivals, when families make large batches together.
A savoury version filled with wild spring greens, often unsweetened and sometimes vegan, is made during the weeks before Easter, when many Cretans avoid dairy and meat for the Lenten fast.
⭐ Why It's Famous
They are the pastry Crete is proudest of: crisp, honey-sweet, and shaped by hand in patterns passed down through families, so that the fold itself can tell you where someone learned to cook.
💡 Fun Fact
In many Cretan villages, the way a cook pinches and pleats the edges is a small point of pride, and older cooks can often tell which family or village a kalitsouni comes from just by its shape.
