History & Culture

The Story Behind the Dish

📍 Central Mexico📅 Colonial era (16th century)🫓 MX

Quesadillas were born in central Mexico when cheese, brought by the Spanish, met the corn tortilla. The name means 'little cheesy thing'. In Mexico City you can order them with fillings from mushrooms to squash blossoms.

With flour tortillas, they turn crisp and sturdy, perfect for packing. Chopping the spinach very fine lets it melt into the cheese, so little eaters barely notice it.

⭐ Why It's Famous

They're Mexico's go-to quick meal, made in minutes on a hot comal.

💡 Fun Fact

In Mexico City, a quesadilla doesn't always have cheese: you have to ask for it 'con queso'.
