Beat the eggs with the salt. Heat the vegetable oil in a small (about 20 cm) nonstick pan over low heat, pour in half the egg and cook about 1 minute per side until just set; repeat with the rest of the egg to make a second thin sheet. Roll both sheets up and slice into thin strips ().

The Story Behind the Dish

📍 Sendai and Tokyo📅 1930s🍜 JP

Hiyashi chuka ('chilled Chinese-style') is a Japanese creation: ramen noodles served cold for the hot, humid Japanese summer. Restaurants in Sendai and Tokyo both claim to have invented it in the 1930s.

When it appears on menus, Japanese people know summer has arrived.

⭐ Why It's Famous

Cool, tangy and colourful, it's the perfect lunch when it's too hot to eat anything warm.

💡 Fun Fact

Many Japanese restaurants hang a sign reading 'Hiyashi chuka hajimemashita' ('We've started serving hiyashi chuka') to announce the start of summer.
