Steps

Marinate the beef
Mix the beef with the lime juice, garlic, oregano, salt, onion, green pepper and coriander in a bowl. Cover and leave at room temperature for 1 hour, or in the fridge overnight.
- 1 kg
- 1 lime, juiced lime juice
- 4 garlic cloves
- 1 tsp dried oregano
- 1½ tsp salt
- 1 onion
- 1 green pepper
- 2 tbsp coriander
✅ Done when: beef pieces are evenly coated in the marinade

Brown in caramel
Heat the oil in a large, heavy pot (at least 6 litres, big enough to later hold all the vegetables and water) over medium-high heat. Add the sugar and let it turn dark amber, about 1-2 minutes, then lift the beef out of the marinade and add it carefully, as it will splatter. Turn the beef to coat it and brown on all sides, about 6 minutes.
- 3 tbsp vegetable oil
- 1 tbsp sugar
- 1 kg marinated beef
✅ Done when: beef is browned on all sides with a deep mahogany color
Add the vegetables and tomato

The Story Behind the Dish
Res guisada is one of the everyday stews ('guisados') of Dominican home cooking, made with the same method as pollo guisado: a marinade of sazón and a quick browning in caramelised sugar, then slow simmering.
It's typical of the Dominican lunch, the biggest meal of the day, served with white rice and often beans.
⭐ Why It's Famous
Tender beef in a savoury, slightly sweet gravy is simple, hearty and deeply comforting.
💡 Fun Fact
Dominican cooks often say the secret of a good guisado is patience: letting the sauce reduce slowly until it clings to the meat.
