Dry the courgette
Put the grated courgette in a sieve and leave it for about 5 minutes; no salt needed. Then squeeze out as much water as you can with your hands or press firmly with a clean tea towel.
- 2 courgettes, grated
✅ C'est prêt quand : the courgette feels dry and barely drips when squeezed

Make the batter
Beat the eggs in a large bowl, then mash the drained corn with a fork or in a food processor so no whole kernels remain (whole kernels can be a choking risk for young children). Add the squeezed courgette, mashed corn, feta, spring onions, herbs and flour, and mix into a thick batter; do not add extra salt, as the feta already seasons it.
- all of it squeezed courgette from step 1
- 2 eggs
- 100 g sweetcorn, mashed
- 50 g feta
- 2 spring onions
- 1 tbsp dill or mint (optional)
- 70 g self-raising flour
✅ C'est prêt quand : the mixture is thick, even and holds together when scooped

The Story Behind the Dish
In Greece, courgette fritters called kolokithokeftedes are a summer favourite, made when gardens overflow with courgettes and served as a meze with tzatziki. Feta and fresh herbs give them their Greek flavour.
Adding sweetcorn makes them extra appealing to children, with little bursts of sweetness in every bite.
⭐ Why It's Famous
They're one of the most popular meze dishes in Greek tavernas in summer.
💡 Fun Fact
One courgette plant can produce more than 10 kg of courgettes in a single summer, which is why so many recipes exist to use them up.
